Dog Food, Lunches, and a Crock Pot

Not altogether, now.

I woke up in a foul mood and I’m still kind of in one. I don’t like cleaning up after parties that I didn’t host/organize. In fact, this party was organized while I was recovering from that last hyperemesis relapse I had. I’m just thankful we have a dishwasher! Threw in the dishes, then started making more. That’s the way the cookie crumbles.

So, we (daughter and I) started off by making Apple Carrot Muffins, which turned out delicious. While they were baking, I had another try at making quinoa (KEEN-Wah). Whenever I say Quinoa in real life, I’ll just warn you here, I say it like I’m in a really old school Karate movie… Air slap chops not optional.

I chose to make the Lemony Quinoa… Without the lemon juice. I love lemony things, but my stomach loves mild flavours right now, so I had to keep it simple. This along with the muffins are to be part of my lunch for the next two days. I have to sit for 8 hours and learn about something called the RAI. If you work in health care — specifically, residential care — you will have heard of the RAIs. They’re treated as gold and I have been tediously filling them out for longer than a year already. This course is going to be very hard to stay awake for. Paid education, though… Gotta love it!

While I was on a roll, I decided to get tomorrow’s dinner ready since I can almost guarantee I would return home to take out pizza if I didn’t. I can not stand the smell of pizza right now. As much as I would love to, uh, love the taste and smell of the convenience that is pizza, I just can’t even think about it without my stomach churning. That said, I made a Tuna & Potato Casserole for the crock pot. Not really a step up in terms of nutritional value, but come on. Work with me here!

As my energy ran out, I realized we’re still out of dog food, so I threw together a little something for our beautiful pooch. I used 1.5 cups of oatmeal, a handful of freshly steamed potatoes leftover from the casserole I made, and a can of tuna (water packed). Not something I’d give him everyday as he needs more protein and less sodium 😛   He loved it, though. I’ve made  anew friend.
