October 13th’s delivery brought us potatoes, onions, tomatoes, kale, romaine lettuce, grapes, white peppers, bananas, limes, broccoli, celery, and carrots.

As the celery was ridiculously long with beautiful leafs on it, I chopped some of the tops off in order to allow it to fit inside the produce drawer of my fridge. I took that top portion and tossed it into a large pot of boiling water in order to start a vegetable stock. Some of my older carrots were starting to go bad, so I added the good portions of those into the stock as well–any other vegetable trimmings went into this pot so as to not waste.

For the kale, I tore off the leafs from the stems and used my salad spinner to give the leafs a good wash. I had enough kale to fill the spinner twice, so I used the first batch to make kale chips. I massaged the kale with olive oil, preheated the oven to 300 degrees, then added freshly coarsely ground cashews, sunflower seeds, cayenne pepper, chipotle chili powder, nutritional yeast flakes, salt and pepper; then baked for 25 minutes, agitating those buggers every 5-10 minutes. I ate so many of these, I almost felt guilty. Almost. The remainder of the kale went inside the fridge within the salad spinner — I find kale lasts a lot longer inside my StarFrit salad spinner.

The following day, I used more kale, broccoli, carrots, onion, celery, garlic, the stock I made the day before, some store-bought chicken stock, more water, and previously made [plain] pulled chicken to create a super foods soup. Served with classic buttered bread.

I have a lot of romaine lettuce, so I will be making a salad with that and the white peppers, as well as incorporating the lettuce into whole wheat wraps. Earlier in the week, I used my hand-powered Tupperware food processor to finish off and make refried kidney beans which were delicious with cheddar cheese in the whole wheat tortilla wraps from Costco.

I’m thinking I may make some chicken fajitas this week with the many vegetables from Sunshine Organics, a salad or two. I also have some cauliflower I purchased from Costco which I would like to use ASAP so it doesn’t go bad… Like last time 🙂

I have been having a hard time creating foods until recently as I had been working part-time while also attending school, which left a very sparse amount of time. I was also in my first trimester of baby # 3, household kid #4. I’m now in the second trimester and although I am still incredibly nauseous, but food smells aren’t bothering me as much and I’m only having emesis in the mornings; just once. Much easier than last time!
