I’m looking towards September, which marks our back to school month here in Canada. I’m going to start preparing and freezing baked goods that can be packed in lunches.
The following items are on my tackle list this week:
- Lunch Box Apple Pies
- Mini Corn Dog Muffins (cornbread mix + hotdog slice + mini muffin tin)
- Soda Bread (Great side-kick to packed soups)
- Mini Quiches (Make with whatever filling. These are popular with the younger kids)
- Broccoli Tots (Have’t tried these yet!)
As for meals this week, I have been winging it as I’ve been working most days and haven’t had a chance to sit down and write out a proper meal plan. The meats I’ve been working with are steak, pork chops, and chicken. Thus far, we’ve paired the meat with side dishes of ceasar salad, garlic bread, zucchini and bell pepper (sautéed with butter and lemon juice), plain ol’ rice with a healthy dose of butter), and potato wedges. Lunches have just been turkey sandwiches as I use up the remainder of deli meats from last week. These are, of course, pre-packaged and vacuum-sealed meats that last longer than fresh cuts.
