Oh good lord. These were the best muffins that ever existed. Ever.
I had one single banana that was about to go to waste, so I decided to make these muffins using a recipe that included yogurt… What? Yeah. I used Activia’s strawberry flavour. You can’t taste the flavouring, really. Which is good. I was grasping at straws there, trying to accomodate my lack of ingredients for the recipe I used.
These muffins are incredibly moist. Incredibly.
I substituted milk for the yogurt… Then realized I only had about a half cup of mashed bananas, so I added in one single-serving sized Activia yogurt to make up for the lacked moisture. Also, I used olive oil instead of vegetable. Worked out really well!
